Chef Jimmy attributes his inspiration to his strong Latin background -- being Puerto Rican and Mexican, he familiarized himself with the flavors of both cultures at an early age. He remembers falling in love with cooking by watching his mother and grandmother in the kitchen and enrolled in culinary school shortly after his stepfather took him to a truffle tasting with Chef Jean Georges at the age of seventeen. Now, having been the Executive Chef at notable Los Angeles restaurants such as BOA Steakhouse and 41 Ocean Members Club in Santa Monica, he is ready to go back to his roots to introduce his exciting new chef-driven concept -- Pour Vida Latin Flavor -- bringing hand crafted tacos and fresh pressed juices to Orange County without the fine-dining price tag.
